This coffee from Mexico is harvested from December until March by hand. It has a mild acidity and a medium body which makes it smooth and easy to enjoy coffee. Our water-processed decafs are done in a facility in Mexico called Descamex. In order to remove the caffeine in this process, green coffee is soaked in a water solution, which removes both the caffeine as well as other solubles in the coffee (flavor compounds, for instance). The water is removed from the seeds and run through a special filter that captures caffeine molecules and allows them to be strained from the solution. The solution—now containing flavor compounds but no caffeine—is then reintroduced to the green coffee seeds, which reabsorb the soluble materials. The coffee is then dried once more, and prepared for reexport.

Ethiopia Organic Bombe Natural - Medium Roast

This coffee from Colombia is harvested from November to January by hand. It has a light acidity and a heavy body, with typical Ethiopian flavor notes. It is organically produced and sourced from Testi Ayla Washing Station. This washing station was founded in 2010 and became part of the Testi group in 2016. It now serves about 375 smallholder farmers in the village of Bombe in Sidama, near the Bombe Mountain. Producers here own an average of 2.5 hectares and grow varieties such as Mikicho and Setami, which are local coffees.

Coffees in Ethiopia are typically grown on very small plots of land by farmers who also grow other crops. The majority of smallholders will deliver their coffee in cherry to a nearby washing station or central processing unit, where their coffee will be sorted, weighed, and paid for or given a receipt. Coffee is then processed, usually washed or natural, by the washing station and dried on raised beds.

The washing stations serve as many as several hundred to sometimes a thousand or more producers, who deliver cherry throughout the harvest season: The blending of these cherries into day lots makes it virtually impossible under normal circumstances to know precisely whose coffee winds up in which bags on what day, making traceability to the producer difficult. We do, however, make every available effort to source coffee from the same washing stations every year, through our export partners and their connections with mills and washing stations.

Typically farmers in this region don't have access to and therefore do not utilize fertilizers or pesticides in the production of coffee.

Cafetto Spectra Descaler contains 6 single-use sachets for convenient and measured dosage every time. 12 packs of 6 single use sachet per carton.

Features:

  • An eco-friendly powder descaler that visually indicates whether a descaling cycle has been successful using pH-sensitive dye compounds. Orange indicates an effective descaling cycle, and blue indicates that another descaling cycle is required.

  • Designed for rapidly and easily removing limescale and calcium build-up from espresso machine water tanks, boilers, and coffee brewers.

  • Detergents in Spectra are readily biodegradable.

Directions:

  1. Add 1 sachet to 500mL of water and dissolve to form an orange solution. Pour into the water tank (if the machine has a water filter, remove this before turning the machine on).

  2. Place a cup under the coffee dispenser and run 29.57oz (120mL) of solution through the machine. Run 2.03oz (60mL) out through the steam wand.

  3. Leave the descaler in the machine for 15 minutes before running the remaining descaling solution through the machine. Ensure the steam wand is purged by turning the steam on for at least 20 seconds.

  4. The descaling solution exiting the machine should be orange, indicating the descaling cycle has been effective. If the solution is blue, run another descaling cycle by repeating steps 1-4.

  5. Thoroughly rinse by flushing one tank of clean fresh water through the system, as well as through the steam wand.

Directions - Backflush Each Delivery Group:

  1. Remove coffee filter from group handle, and replace with blind filter.

  2. For daily cleaning add 1 EVO Sachet into the group handle and insert as if brewing espresso. If the machine is cleaned less often, use 2 EVO Sachets.

  3. Start cycle and allow to run for 10 seconds to dissolve cleaner.

  4. Stop cycle and allow to sit for 10 seconds.

  5. Start and stop cycle 4 more times - run for 10 seconds, stop for 10 seconds.

  6. Remove the group handle and rinse well under stream of water from delivery group. Turn off.

  7. Re-insert handle with blind filter, start and stop cycle 10 times - run for 5 seconds, stop for 2 seconds to ensure thorough rinsing.

  8. Remove blind filter and insert regular filter.

  9. Brew and discard a single espresso to re-season machine.

Directions - Clean Filters and Group Handles:

  1. Soak group handles and filters in 500mL of hot water with 2 EVO Sachets for 10 minutes.

  2. Rinse thoroughly in running hot water.

MFC Green Organic Milk Cleaner - 1L

An acidic, organic milk frother cleaner. MFC Green contains biodegradable detergents and is derived from natural acids. Safe for all machine parts, MFC® Green is listed with NSF. It has been tested, evaluated passed the most stringent toxicology and corrosivity standards. The ingredients and formulation of the products that are NSF certified are safe for use, leave no harmful residues and do not cause corrosion within the coffee machine.

Features:

  • Provides excellent milk fat removal along with descaling of automatic milk frothers. MFC® Green also leaves no trace of odour after rinsing.

  • It is recommended that MFC Green is used more frequently than the other MFC cleaners due to its milder properties.

  • NSF Certified

Directions:

  1. Ensure the white cap is tightly sealed and slightly loosen the green cap.

  2. Gently squeeze the bottle until reservoir measures 50ml, remove the green cap and pour from reservoir.

  3. Add 50ml of MFC Green to 1 litre of warm water in a cleaning container. Ensure you replace the green cap and seal tightly after pouring the required dose.

  4. Insert milk frother suction tube into solution.

  5. Run entire solution through frother.

  6. Repeat above procedure with 1 litre of clean water to rinse all the components thoroughly.

  7. Do not mix with other chemicals.

Liquid Organic Descaler - 1L

Perfectly suited to domestic or small office machines. Organic Descaler is a safe and effective solution for removing hard water scale from thermoblock espresso machine lines, capsule machines and boilers. This product can also be used to descale kettles.

Directions:

  1. Add 125mL of Organic Descaler to 875mL of water to make up 1L of descaling solution.

  2. Follow the machine manufacturer’s instructions to decalcify, de-lime or descale the machine.

  3. Always rinse the machine at least twice with fresh water after decalcifying, and before re-filling and reusing the machine.

  3. Start the cycle and allow to run for 10 seconds to dissolve cleaner; stop the cycle and allow to sit for another 10 seconds.

  4. Start and stop the cycle 4 more times, running each for 10 seconds and stopping for 10 seconds.

  5. Remove the group handle and rinse well under hot water from the delivery group. Turn off.

  6. Re-insert handle with blind filter to rinse. Start and stop the cycle 10 times - run for 5 seconds, stop for 2 seconds, ensuring a thorough rinsing. Remove the blind filter and re-insert regular filter.

  7. Brew and discard a single espresso to re-season the machine.

  1. Soak the group handles and filters in 500ml of hot water mixed with 2 scoops of Evo Espresso Machine Cleaner for 10 minutes.

  2. Rinse thoroughly in running hot water.
